Quinoa Salad Recipe

This recipe offers you to make fresh and beautiful salad for your little ones. It is packed with nutrition and nice flavors. It is best to make it in summer with fresh vegetables.

Ingredients:

  • Uncooked quinoa – 1 cup
  • 1 medium red bell pepper
  • 1 medium yellow bell pepper
  • 1 small red onion
  • Curry powder – 1 1/2 tsp
  • Chopped cilantro – 1/4 cup
  • 1 lime
  • Sliced almonds – 1/4 cup
  • Dried cranberries – half cup
  • Chopped carrots – half cup
  • Salt – 1/8 tsp
  • Grounded black pepper – 1/8 tsp
  • Water – 2 cups

Method:

  1. Boil the water in a saucepan over high heat. Then throw in the quinoa. Cover the saucepan and let it simmer for 20 minutes. Once it is cooked, take it out in a bowl and chill it.
  2. In this step, you add all the ingredients in the chilled quinoa, mix everything and then put it in the refrigerator for some time.

When you have to serve the salad, take it out and enjoy with a bowl of watermelon. Your little ones will love it. You will be surprised when they will NOT say: “Mama we don’t want to eat a salad”.
