Christmas is here soon and thinking of D-I-Y food for Christmas? You may want to consider creating a Dorset Crab Cocktail for your guests.

Ingredients

  1. Shellfish Mix
  2. 200g Picked White Crab Meat
  3. 100g Poached Lobster Tails
  4. 40g Diced Daikon Radish
  5. 60g Mayonnaise
  6. 30g Crème Fraiche
  7. Black Pepper
  8. Chopped Chervil
  9. Chopped Dill
  10. Chopped Chives
  11. Tomato Jelly
  12. 2kg Over Ripe Cherry Tomatoes On The Vine
  13. ½ Bunch Coriander
  14. ½ Bunch Basil
  15. 1 Head Of Fennel Chopped
  16. Seasoning To Taste
  17. Leaf Gelatine
  18. Garnish
  19. 5g Oscietra Caviar
  20. Mixed Sea Herbs (Samphire, Rock Samphire, Stone Crop, Dulse)
  21. Sliced Breakfast Radish
  22. 4 Quail Eggs
  23. 40g Diced Cucumber
  24. 4 Large Poached Langoustines

Making them up

  1. To make the tomato jelly, place all the ingredients into a blender, puree till smooth
  2. Hang this mix in a cheesecloth overnight and allow the clear liquid to pass through
  3. Adjust the liquid to taste with salt, sugar and black pepper
  4. Weigh out 500ml of the passed tomato juice and soak 3.5 leaves of gelatine
  5. Warm a small quantity of this liquid and add the soaked gelatine, stir to disperse
  6. Take off the heat and add the remaining liquid, allow to set in the fridge
  7. Combine all the ingredients for the shellfish mix together
  8. Adjust the seasoning to taste, spoon into 4 decorative glasses
  9. Top with the set tomato jelly
  10. Garnish with the cucumber, radish, langoustine, caviar, quail eggs and sea vegetables
